  6. Cacio e pepe doesnโ€™t have butter.. you made pasta al burro.. Dishes have names and cooking technics for a reason. You should say you made pasta with a cacio e pepe inspired sauce.

    Also, where is the pepper?

    Just an explanation, not trying to be an Italian food nazi, but there is a reason why traditionally things are done a certain way.

    Sometimes breaking tradition can improve things, but this is not the case, in the end do things the way you want and you do you, just commenting cause you said in your opinion this version is better.

    The point of mantecatura is that you can create a creamy texture, while using less ingredients, less calories and have a better balance between the pasta and the cheese. This version, while probably being 4x more caloric than a normal cacio e pepe, I will guarantee you will only taste of cheese, and if you salt the pasta and you actually only use pecorino romano as your cheese with butter, will be, not just salty, but salty as fuck. Now I don’t know if you use actual pecorino romano now, but if you do and use this proportion, there is absolutely no way this is edible, like really this amount of pecorino romano will just taste like salt.

    Also I love when Americans are flabbergasted at the fact that Italians eat pasta or pizza every day and manage to stay fit, the point is that our pasta has a normal amount of calories, your pasta has the entire daily caloric intake of a person all at once.

    Again, if you enjoy this, happy for you and continue eating it, but it’s not even comparable to a real cacio e pepe.

    It doesn’t need any cream. Toasted black pepper, pecorino and pasta water, and then the pasta. That’s it. Maybe a little salt.

    This is Alfredo. Cacio e Pepe is made a specific way, because variances create different sauces. You made Alfredo and it’s ok to just say that.
